Chefs choice 1520

 Hi, im looking at buying a chefs choice 1520 knife sharpener.

About $350. 

Is there something else I should look at?

Spending 350 to get a sharp knife is pretty expensive.

 

No offence but are you planning on using in a commercial situation or??

 

Most don't know how to use a stone and a steel but I'm curious why you want to throw the cash down.

 

Don't think I'm being facisous,  I own a tormek 7 which is top of the range but In reality a stone and a steel probably would've done me also ha.

I'll chase up another brand for you that is not mechanical but supposed to be awesome amongst the hunting fraternity.

 I've been using the 120 for around 15 years. I have had to replace the discs but it still going strong. Great product, you can sharpen a knife in under a minute. Worth the coin.

As the other fellas have said it's a neat bit of kit and by the sounds of it lasts the distance!

 Better if you do it down the arm not up, with a real sharp knife going upwards can take skin off. Learnt from experience as a young slaughterman.

Still use an FDick steel I bought at age 17 and have a variety of sharpening stones collected over the years.

 Do all mine off a whetstone  stone Boony, get them to relative arm hair shave condition lol. The hardest to do is my Dexter Russell, the rest are Swibo's which sharpen easily.

CC 120 also

The only advantage of the 15/20 over the 120 is the option to select a 15 degree sharpening angle if you have any Japanese knives.

 

Otherwise all others are usually 20 degrees, and the CC120 will give you a triple bevel edge, get a quality steel to maintain the edge between sharpening. I have had mine for over 10 years and still great.

Goes mint and love it. 

Everything from fine fillet knives to cleavers goes through it.
