Panfried dolphinfish with polenta chips

Polenta chips are fun for a change. Just make polenta as per normal (I use salt, stock, sometimes butter, sometimes parmesan), then pour it into a tray, then cool in the fridge. When its firmed up, slice it into chips, and baste with melted butter, then pop into a 180degree oven for 30min, turning after 15min.

Panfried dolphinfish, you can work that out yourselves ;)
