Ollie I think it's more to

Ollie I think it's more to do with the depth and area they're caught in rather than diet. The ones I've caught in shallower tidal water are usually the same colour as Mitchs trout above and ones taken from deeper water are usually bright orange.

Different species

Some of them are also different species of fish. Bright orange ones are usually coral trout or vermicular cod, there are also polkadot cod and bar cheeked coral trout which are often darker in appearance. They do also vary by the ground they live on and around.
