Not a lover of Morrocan dishes. A previous employer invited us around for a show off in the kitchen and it turned out to be a nighmare LOL. That experience put us off the whole Morrocan thing completely. Flathead is a great eating fish cooked as it is. No need to cammoflage the flavour of the fish IMO.
