Whats your favourite squid recipe

Have still got some squid left over from Thursday, have had it the last two nights and looking for a new recipes. What are your favourites?

 

First night had the standard deep fried salt and pepper squid, most know this one, always a winner.

 

Last night, tried something different and made up a concoction of my own, went for a garlic butter and lemon vermicelli stir fry....wow! Very nice.

Sorry about the sad photo, too keen to get into it, ingredients were:

- squid, soaked  in lemon juice for 30 minutes - helps to keep soft.

- squid then fried for 20 seconds on max heat with loive oil, a bit of chilli, chinese five spice, heaps of garlic and a bif big knob of butter and juice from 1 lemon at the end. Take out of wok and place on plate to go back in later.   

- add vegies to hot wok (onion, capsicum etc) add a bit of fish sauce, oyster sauce and a tad of chilli sauce to taste  (fish sauce adds salt, oyster sauce adds depth). 30 seconds.

- add vemicelli which has been soaked in cold  water for 30 minutes - fry for another 30 sedconds

- add squid and all juices.

- fry for another 30 seocnds and serve.

Deep fried after dipping in

Deep fried after dipping in mix of besan flour, salt, pepper, paprika, garlic powder and served with apple mayo!

Spice rubbed and BBQed on the little charcoal grill.

That looks pretty ace though!

 pan fried in a creamy lemmon sauce or just marinated in garlic for a few hours then simply a quick pan fry in a bit of hot butter, only takes a few seconds as long as the pan is real hot

Love squid fried with anything.  The one thing that improves it by atleast 20% imo is instead of cutting it up into rings, cut it into chunks and score it deeply with a fork or a knife.  This seems to improve the squid taste and i will never turn a squid into rings again.  The chinese resturants seem to do this and i fully agree.

Yeah, did tempura squid tonite with a bit of chilli and garlic powder. Deliceous. Picked up another 17 this Arvo, so bring on the recipes.

bread crumb recipe

Cut squid into squares

breadcrumbs in a bowl with chilli/garlic power,, salt, pepper and other spices you like, then stir around for a while to get spices mixed,  pour olive oil into bowl with b/crumbs, crunch some up in your hand if it keeps shape, then pat onto square squid both sides, put in a flat clamped down toaster, (like fish clamp or bigger toaster use on camp fire, we bought ours years ago WA Salvage) then put on grill side of bbq, cook till you can smell bread crumbs burning (slightly) tastes delicious with sweet chilli dipping sauce, don't over cook squid, can also deep fry this recipe. 

We also put this breadcrumb mix on to snapper and dhuie fillets, then cook on bbq with baking paper put down first,  butter does make a difference when you cook fish, delicious, especially if breadcrumbs are nice and crispy.  We've created monsters in grandsons/family/friends with this recipe of b/crumb mixture.

Friend uses this b/crumb mixture to stuff her squid as well, (yuck don't like stuffed squid tubes.)

 

forgot to mention.....also coat tentecales as well, yummo
