Who of you guys go out to catch these fish, I caught one of the Rockingham jetty last night. It was 30 cm fish. We took it home cleaned it, stuck it in a pan and baked it with lemon butter and worcester sauce. Must admit, it was pretty tasty, very much like sole, was a bit bony on the edges though.

i.ve never caught one here , but from uk they are one of the tastiest.
never cooked it in anything either
If I spent half as long fishing , as I do reading this bloody forum , I'd be twice the fisherman I am.

At a live seasfood restaurant in China, once it was cooked, they just cut the edge off with scissors!

Tea last night
I just happened to have one for tea last night. Caught it last week near garden island fishing with fozz. Not sure if freezing it helped but the skin pulled off the top and bottom real easy and it was a big enough that i didnt worry about the meat on the edges, the fillet from the middle sections was spot on, almost as good as the KGW we had with it,almost.

Flounder are a top fish to eat. Sweet and moist. As others have said just leave the small bones around the edges. Once you have eaten one side just lift the backbone from the tail end and it will separate from the flesh saving you from having to turn the fish over which can get messy. Enjoy.

Very much like a sole, my favourite fish to eat. We caught them with a devils fork back in South Africa in shallow water at night. Using a torch we just speared the area where you see the little shiny dots, (The eyes). That way you dont damage the nice fleshy parts.
