I had one done back in the 1990's by Lyndon Smith of Coolbellup but I think he may have finished up now. Also met a bloke from Western Hunting and Taxidermy Services in Roleystone that might be able to do it or at least point you in the right direction. one of my mates got one done by the Perth Museum so they could also be worth a try.
Josh from onstrike posted a marlin in the last couple of days that was going to be shoulder mounted. Maybe flick him a message and ask who he is using.
