cooking ambers

i normally batter all my fish, but i was looking at trying something differant.

 

what is another simple/tasty way of cooking skin free fillets, is there a certain way thats goes with the ambers?

 i am not in tills leauge with the cooking so keep it simple please.

Marinate with equal parts sambal sauce and plum sauce, add lime juice and sugar then bake in oven. Play around with the sugar and lime to suit your tastes.

cut some thick chunks cover in a little olive oil garlic what ever herbs and spices you like! place a tray down cover it with alfoil enough to totally wrap the fish,

put the fish on the alfoil remember to spray the alfoil with olive oil spray  to stop the fish sticking!

add a dash of lemon or in my case alot! wrap the fish and bake! cooking time will depend on how thick you cut it!! but dont over cook as the fish will dry out very quickly! if you cook it right it will melt in your mouth and very juicey!

Just flour and fry in some olive oil. Bit of lemon juice after it's cooked, salt and pepper... nice! But also great curried, or marinated! I've liked it every way I've cooked it.

my mums made it fried with fish masala you can get from any asian/oriental store as well as curries it with quite strong ingredients. amazing both ways! I can always get mums recipe if you want it. South african/malay recipe

why not just lightly flour it and cook in the pan with a bit of butter and to spice it up a bit add a bit of lemon pepper and serve on a bed of mash. cant go wrong other than overcooking it

 i cooked up the curried amber tonight with basmati rice......mmmm very nice, very differant to the boring old batter.

even  my oldest (troy) liked it and he dont like anything, even had seconds.

 

the wife is a little pissed cause the boy had seconds...he he he

 a freind we fished with years ago used to eat the jewy raw while filleting, the part right up around the eye/top of the head.
