Vacuum packing

Being an optimist i have purchsed a vacuum sealer in the hope of catching something worth keeping - any advice on the storage life of vacuum packed fillets?

about $85 plus postage. Gave it's first run last night bagging up the wife's carrot crop and some home made pies. Worked brilliantly but next time i will freeze the pies as they now look a bit like pancakes. Just Google Crazy Sales.

Try to keep moisture out when sealing, a good trick if you want to marinade meat

is to put it in a small sandwich bag and tie it up place it in with meat then vacuum and seal then with your fingers pop the marinade bag inside the sealed bag and place in fridge for a little while before freezing if desired. mmmmm yummy

im still pulling fillets out 6 months later and they smell and taste like the day i caught them where as the fish that i dint vac pac is covered in freezer burn

i agree, 4-5 month old fish stil tastes wicked.

also dont put the fillets in wet, the water kills the vac! been there done that already

I picked up this little tip when I went on a fishing charter at the abrolhos. It sounds a little gross but works a treat. Get hold of some womens pads (yes you did read right, and yes they are brand new...hahaha). Place your fresh fish filletts in the vac pack bag and then cut a piece of the absorbent pad to about the size of a matchbox.

Place it in the bag along side the filletts and when you vac it down the pad absorbs the moisture. By doing this it means the moisture is trapped into the pad and therefore your fish filletts will not suffer from freezer burn. If the idea of womens pads freaks you out too much you can use gauze that you would use to cover a flesh wound or even a piece of folded up paper towel.

I dragged some fish out of the freezer last night that I have had there since March and it still tasted as fresh as the day I caught it.

4 Months and still tastes perfect. Purchased a vac packer this year to get me through the v5 ban that didnt end up happening(maybe next year).I leave the fillets in the fridge overnight uncovered to remove excess moisture then pack the next day.

we wash fillets off with salt water we bring in from out deep (where its clean) pat dry with paper towel and then vac pack

tastes as good as the day we caught it never in the freezer longer than 2 to3 months as it gets eaten

we swear by them especially when you have a trip away

thanks everyone - i have been practicing on the carrot crop packing a 2 person serve until i realised what it was costing in bags outweighed any saving. I am now packing kilo lots in larger bags. - and thanks Scano, i bought some panty liners as they were compact and flat - now the girls at the local shop snigger when i come in.

Buy in a roll can save some dosh also can cut roll on angle to get bigger bag.
