boat or land based?
Boating:
The harbour is a good starting point. ytk, salmon and even pelagics etc frequent there. Also botany bay is a good spot, particularly for lizards and tailor. Port Hacking is another good spot. My boss had a place on the Hawksebury, so I spent some time around there and Pittwater which was quite productive.
Landbased:
Trout! You are on the doorstep (kinda) to all sorts of quality trout fishing in the snowy mountains and surrounding tributaries. And a plane trip to Tassie or NZ is cheap for some worldclass trout fishing. There are also plenty of landbased spots around the place for all manner of species including bream, skippy and so on - any decent tackle store will point you in the general direction.
I found a good starting point is the local tackle store. From there location specific forums are useful:
http://www.sydneyfishfinder.com.au/hotspots.html
http://www.sydneyangler.com.au/
http://www.fishraider.com.au/
That should get you started. If you dont have a 5wt fly rod, add it to your shopping list IMO and get stuck into the trout.
Hope that helps.

Troy Whereabouts in Sydney are you based
I know a lot of great spots on the north shore.
Hope you didn't head up to Coffs Harbour last week, Hat Head was flooded in again.
