Home made Beef Jerky

Dont know if anyone else gets into it but Ive just made around five kilo's today in preparation for winter night fishing , basically i use topside or rump steak  after all the fat is cut off cut into thick strips about 3/4 of an inch and  baste in your favorite substances like :

-Chilli oil

-Worchester Sauce

-Chilli flakes

-Salt and Pepper

-Bbq Sauce

-Steak spice

-Honey

-Curry powder

Basically anthing in your spice cupboard , then take the middle racks out of your oven and leave only the top and bottom rack , place al foil on the bottom rack so the basting wont drip onto the bottom of the oven so the mrs dont whinge and then thread the strips of meat onto wooden skewers so that the hang down in between the top rack . Once the top rack is full turn the oven just on  , if its a gas oven you only need the pilot light on , and electric on at the lowest setting and prop the top of the oven door open about an inch . Curing time is around 3 hours or untill meat shrivels and goes dry looking , then keep them in an airtight container and take them out on the boat or on the beach with a beer , cheers feral

 

 

and you have to clean the oven afterwards

My son and i love the Bull Bar jerky with a beer but at $5 a pack it's expensive stuff. I tried making my own a while back but too soft and tasteless - the kelpie loved though. Thanks for the recipe, i will give it a try.

Top idea. I have a South African business partner who is right into it. We've made up a drying cupboard and that works a treat. Will post a photo of the cupboard it's pretty basic. Basically a tall box with a globe in the bottom to help drying.

will be doing a new batch soon ...always goes on the boat!!
