Bang On Batter

I must share this batter recipe with you guys, (saw it in a fishing mag), its bang on!!
Did it last night, with a few herring fillets.
Half cup self raising flour, and half a cup corn flour.
Put in a bowl, and add soda water slowly as you stir,(ignore any little lumps), untill you have reached a nice batter consistency.
Coat fillet in a little cornflour before putting in batter.
Put in pan with good amount of oil, and fry.
Drain off excess oil before serving.
Mate, very nice!!!
Will turn you into a pro over night.
Might even pick you up some 'brownie points' with the missus.

Soda water?
Personally, for an extra little bit of "Golden Browness" on your batter, i would substitute the soda water (blleeeeccchhhhhhh) for a strong yeasted beer, an excellent example of this is Coopers sparkling ale. Trust me, it makes all the difference, and the added flavour is awesome!

I got some nice snapper and and Dhuie fillets in the freezer that I will try this batter out on. Been cooking them on the bbq in foil with lemon and s&p lately but might try the batter for something a little different.
with plenty of herring and skippy around lately it will work well on the bite sized fillets as well.

I usually do this with fillets form a heap of herring, whiting or skippy. Batter em up in the beer batter and have a bowl of sweet chilli sauce to dip em in, a cold beer also compliments the taste massivley!@

I dont usually batter fish
I dont usually batter fish as I have a good crumbing recipe
buy a packet of tandanco light season fish coating and mix the 50/50 with bread crumbs. ( I used the spicey crumbies for extra zing)
cut all your fish up into nugget size bites.
dust the fish in flour, dip them in egg and roll in the crumbing mix.
>TIP. use a different finger for dipping in egg and crumbs as it cuts down the build up on your fingers.
small amount of oil in frypan or on bbq plate.
cook one side until golden and flip over.
As they are small peices it will only take a few mins.
you will find as they are coated and cooked for only a short time they are very juicey and moist.

Tandanco
Been shopping this morning for weekly shop, and i got a packet of the tandanco. Keen 2 give it a try. Just need the fish now.. Its a shocker of a day 2day. Hope tomorrow is better.

Hi Ya,
Missus was telling me that she saw a 'cook' on TV and all he did to make really good batter was to use iced water in the flour. Apparently the extreme difference in temp between iced water and hot oil makes the batter really fluffy. Haven't tried it yet but will.

Tempura Batter
Hi Guys that is a tempura batter receipt and can be made using your favorite beer instead of soda water work well

Water and oil
Just be extremely careful with water and oil, can cause nasty pan fires and bad burns from spitting.
Some good recipes there though.

Hey the iced water
was on the fishing/cooking show called FISH with Udo and Pete , his tip was to add icecubes to the beer batter , colder the batter when it hits the oil the better , have tried it and seemed to work a treat , everyone that sampled reckoned was the lightest batter they'd had .
Just one more cast , honest !!!

gluten
I seem to remember its all about not activating the gluten in your flour. That way you get crunch, but no chew. Thats what keeping it cold does for you. Its the same reason you're supposed to put all batters in the fridge for 30min after beating them.
