I threw all the vegetables for dinner under them and cooked with fat over top in pizza oven. Dog is dragging them around the lawn now.

What brine does best job? Do you smoke after it has been to in brine? . Been looking into doing own bacon for a while. Thanks

45 on the saltomiter, 1.5kg/100L water Prague powder #2, 1/2kg brown sugar. And inject the thicker bits of meat. Leave in for 3 days, then walk & soak in fresh water for 10 hours & smoke. Get core to 62 degrees. Job done
