Species Edibility

Hi, wondering if a couple of species are edible or not, and if so what kind of cooking ideas you can share. I am a Fremantle based fisherman who is wondering also which species CANNOT be eaten too. 

Firstly, Butterfish. I have never seen one eaten, or heard of people catching them for anything but bait really. Any good ? 
Next, Trumpeter and Yellowtail. 
Thirdly, Scaley / Slimy Mackeral. 

I tend to find some people haven't payed any attention to some species' edibility because whoever taught them to fish has told them "Nah, no good. Chuck it back!" because they don't necessarily enjoy that particular fishes taste :P


I am trying to get the most out of my local flick sessions targetting bread and butter species in my area, and always trying to learn and try new things. Cheers guys.

All to ones you mentioned can be eaten, if you like them is another matter.

Trumpeters are full of iodine, filleting them and taking the skin off can get rid of some but not all.
Blue or slimy macks have a very soft flesh, even softer than tailor, scalies I have never tried to cook up but would think bones might be a turn off.

Yellowtail are not too bad if you like strong tasting fish like skippy.

Rock Wrasse - not on your list but I can assure you they can be eaten but then again I'd rather eat the soggy cardboard out the bottom of the rabbit's hutch!!

butterfish is OK deep fried whole (just gut and scale first).

But then again most things are OK deep fried whole!

 I've eaten scaly mackeral, my dad use to smoke them, tastes alright as long as there not overcooked. Also had yellowtail, we use to place them raw in vinegar and chopped onion and then crack pepper over them, leave them overnight for the vinegar to cook them, taste is again only reasonable. You should have a chat to some of the asian fisherman as they seem to take them home to eat and probably could give you some tips on ways to cook them.
