Seafood sauces

I'm contemplating trying a new sauce over some black bum fillets - I have a cracking Capers and Horseradish Sauce, but am keen for some alternatives - Does anyone have a favorite sauce they'd be willing to share? It doesn't have to be a white one... or a fish one for that matter... (I'll just improvise)

mate just buy some of that cheap sweat chilli suace from a Chinese shop, not Coles etc. melt some butter and add how much crushed garlic you want. Then when melted add a little of the sweet chilli and stirr like mad. It looks like it wont work but trust me. You just have to work out the portions and I have it written down somewhere. Fantastic on any seafood esp prawns, craps etc. Yum. Who the hell started this post just before dinner time.

Not a sauce but I crumb my fish then when one side is cooked and i flip it over then i place a nice fat slice of fresh mango on it and by the time it cooked the mango has welted all through the fish...mmmm

two egg yolks 1/2 teaspoon

two egg yolks
1/2 teaspoon mustard power
3/4 cup of veggie oil
1/4 cup peanut oil
chili sauce to suit taste
1 tablespoon mustard pickles
1 tablespoon Worcestershire sauce
1 tablespoon tomato sauce
1 tablespoon Lemon juice
Salt
Pepper
Tabasco

Container that isnt too big in circumference to reduce whisk time.

whisk egg yolk, pinch of salt, big pinch of pepper, mustard powder, few splashes of tabasco.

add 3 Tablespoon of oil, whisk until thick
add 3 Tablespoon of oil, whisk until thick
add 3 Tablespoon of oil, whisk until thick
make sure you dont add each batch until last batch is well mixed or it will fail.

Slowly pour remaining oil at a steady rate while whisking.
when all oil is added and lemon juice.

Ok, you have now made the Mayonnaise.

to your mayonnaise ( or the bought variety if you wish)
add the Worcestershire, chili sauce, tomato sauce and mustard pickles, more Tabasco to taste.

Neander that sounds mouth watering... and I gave it a crack but I'm sure I messed up the mayonnaise bit....
So I did option 2 - used the "bought variety" and added the extra's - came out quite nice...

BBQ sauce

 you might be able to use this for fish kabahs

 

  • 1 cup tomato sauce or tomato paste
  • ½ cup maple syrup
  • ¼ cup balsamic vinegar
  • 2 tbsp lemon juice
  • 1 tbsp Worcestershire sauce
  • 1 to 2 tbsp English mustard or cayenne pepper
  • 1 tsp sea salt

 Mix all together, brush on and while bbq'ing

otherwise their is the standard white sauce.

1TBSN melted butter
1TBSN of flour
um about 450-500ml of milk. I dont usually measure.

melt butter, add flour cook till light color change.
remove from heat
add small amounts of milk and whisk all the lumps out.

once you have added all the milk , heat and stir until thickens. Dont boil.

That is a basic white sauce.

you can then add parsley,
or cheese
or cheese and hot english mustard.

When I cook I google.
Say search for ... Recipes Mayonnaise
Then I read 10 different recipes. Take the best out of each of them and make my own to suite my own tastes.

It will probably best to follow them exactly until you have made your recipe correctly a few times.

NOTE! this works with cooking, will not work when Baking as you require the correct measurements for it to be succeful.
