pickled octopus

gday peoples,

me and my mate went fishing today at woodys we done ok few skippy small pinkys(released)

also we managed to score a couple of ockys around 2kgs each on me rod

now that we have these yummy 8 legged friends i need to know does any one no how to pickle these suckers

friend, heaps of different ways to pickle them.  Also on the fisheries site they have different ways to cook seafood ie; occie, hope this helps.

Freeze them for a couple of days,partially thaw them untill they are just pliable.Given them a good workout/knead then refreeze for a day or so.Don't let them thaw completely.This relaxes the tentacles so they are not like chewing on jelly rubber.

Chuck them into a big pot and boil/simmer for 2-2x1/2hours.
Some people like to remove the skin/suckers but I leave them on,cut into 1 inch sections,place them into screw top jars along with vinegar.Like with the suckers different folks like different vinegar--myself I go for the spiced variety heated up untill close to boiling the poored in with the occys.Heating the vinegar takes the bite out of it.You can also add chillies to give them a bit more bite as well.Leave for a few days at least before trying

Daisey put up a good recipe for occy LaughingThanks buddy . you can find it under cooking tips in FORUMS.It works well .A bit of chille and garlic wont hurt either.

I rekn a good 1 is as carnovite said must b frozen first say for a coupla days then boiled whole (heads takn of a must) then boiled for at least half to an hour in sea water or salty water depending on availabilty... then strip off exesss skin (sum tenticles) cut into nice bite size pieces then a 50/50 mix of quality italian dressing and or balsamic vinegar (paul newmans) sweet chilli sauce (for chicken) placing occy piecies and sauce mix into big ass jar for preferablly 3-4-5 days depending on how hungry u r then hook into it guaranteed qualty!!!!! mmmmmmmm
