Finally found a smoker for Exxy.

Been looking out for a good sized smoker for awhile now and found this one just in time for Exxy. Got it landed here for $299 (from Melbourne) which I think is pretty good considering a smoker box costs $100 and has a tenth of the space. MMMMMMMMMMMMMMMMMMMM........smoked Mackeral.

Can I smoke mackeral and then freeze it?

We have before but in a vac seal. Take the smoker all the time to Steep and eat it up there, any left over gets frozen. Pobably not best to leave it for to long but havent had it in the freezer long enough to see what it is like!

Ive tried it smoked then frozen and the other way around. Not much diff. Gets eaten before ya can blink.

Smoked some up a couple of weeks ago using Mackie which had been frozen for 10 months. Lasted about 10 seconds Wink

As said, the trick is to cryovac.

Hey John,

Lit the smoker up last night, I would say it is one of the best purchases I've aquired. We did some Tassie salmon fillets and chicken thighs in it. The missus made the coment that I had put too much food in it as we would not eat all.

We pulled a piece out and it was on, we were like starving wolves once we had a taste of the fish. The neighbour came over as he could smell it and he turned feral as well once it hit his mouth. The chicken did not dissapoint either. I could not believe how quickly it all went and the kids demolished theirs as well.

In my opinion I think the water/marinade tray is ingenius as the food was absolutely succulent. Mate I would absolutley put it on the must have list!

Time and tempreture

Salmon took about 15-20 min

Chicken was about 45 mins (just to be sure but will probably reduce this)

Temps - these temps were taken with a fluke thermometer, so they are pretty close.

            Low - 115 degrees

            Med - 150 degrees

            High - 180 degrees

it to exxy as it only wieghs 20kg. So if you boys need some fish smoked drop in. I have spoken to the bloke in Melbourne and you can pull this down to 110 c with the vent closed, he reakons with the vent open it will be as close as you can get to cold smoking at the price. I have researched this for awhile now and its the best price for that sized unit.

Hey Till I reackon sharky should be alright too, how about some Rankin?

 We've been looking for a 'proper' smokie for a while now and so I might just have to catch up with you at some point and check it out if I can.

I love smoked anything. And all that makeral that hubby catches for bait is sometimes too good not to eat. Smoked, taken off the frame, mixed with cream cheese, some 'tart' tartare sauce, lots of black pepper and good squeeze of lemon juice...whizzed in the food processor then served as pate. Freezes well also. Bring out for all the last minute entertaining gigs, defrosts quickly as you are eating it during the summer months.
