Cooking question

Caught a fish today...yay!!
Dhue in 12 m water about a stones throw from our front door. Only about 6 kg, but a big suprise when trying for skippy.
Would like to cook it whole over the barbie to feed 12 tomorrow. Am I making a mistake here and need to slab it?? Have cooked a range of fish this way (pretty impressive in the middle of the table), but never Dhue. Any info would be great - before the knife comes out.

We sometimes cook the smaller ones in the webber and they always turn out great, not sure if the barbie would cook all the way through unless you had a hood over the top.

Fully suprised when it came up.
Ya just neva no!!
Was the last run for the 'fish magnet' with a full team of girls onboard.
Have a lid on the barbie and hubby rigged a stand for the bigger fish. Thanks mate, if it goes on a Webber, will do well on this set up.

Top catch in that depth.

Can't say I have ever cooked a Dhuie whole. The wings certainly come up great on a weber, but I have always slabbed the fish, and at that size you may have to halve a few of the fillets to make sure they cook  evenly.

Try coating the fillets in half Dhukka and half breadcrumbs mix, for a touch of the exotic. That's what we had on Xmas day. A Whole 13.5kg fish slabbed and done in Dhukka. Mmmmm yum. Fed 20 hungry rellies.

Cheers

Yeah Luke, far better to be on the water than doing a slow roast on land.

OK, going for it - up off the plate, full of goodies (thanks Andrew, forgot about that) with slashes in the meatiest bits, marinade (undecided at the mo) rubed in....mmmmmmm....let you know how it goes.

ive done a few whole dhuis

Thu, 2007-12-27 01:54

ive done a few whole dhuis on the barbie .biggest was about 6.5 kg  .stuffed him with tomato lemon .onion and garlic .slice the thick part of the fish about half way to the backbone .plenty of butter, slices of tomato ,onion rings bit of garlic and then seal him as best you can in afoil.cook for about twenty  minutes at least i reckon .on both sides when ya think all is good small hole in foil at the thickest part of the flesh and dive in with afork to see if its ready.
YYYUUUMMMOOOOO

geeze a 10.5 jobba would feed a fair few hungry people
always in it just the depth that varies
