herring smoking

any tips on smoking herring.
I like fish but don't realy like the taste of bbq herring. My fishing mate likes them and we always stop at Parmelia bank on the way in and get a dozen. Love the idea of smoking them but need info on how too.

smoked Herring
My husband got a smoker for Fathers Day. He likes to eat them any way they come. We have smoked them. salt herring fillets then coat them well with Dark brown sugar leave in a tray in fridge for a couple of hours. The salt reacts with the brown sugar. After marinating them put them on your rack in the smoker for about 20mins max.

try this
go to coles or any other shop. get a bread crumb called crumb in one. fillet the fish and then wack in a bag with the brad crumbs shack and then cook in a lil oil. yummo yummo. i ussually cook fish bites for a bbq with friends as an appetiser. basically use any of the small peices you get when filleting

Far as i know, the purpose of the salt is to bring some of the excess moisture out of the fish so it doesnt steam in the smoker. (Brine does the same) The brown sugar just makes it taste great. I mix the salt and sugar first to save time. I usually skin and bone the (mostly skippy) fillets, rub them with salt/sugar and hang them with small "s" hooks i made up off an old fridge shelf. When they stop dripping...into the smoker. If u bone the fillets you can eat them faster!!! lol
