Pickling Occy

Can anyone tell me how to pickle occy? Is there any particular type of occy which is better? We get a couple of different types up here (not exactly sure which) but we get the big monsters similar to the ones you see Goat post up, but we also get the small rock pool occy which are about the length of your forearm.
Anyway, any advice on how to make them them delicious will be appreciated. (Just thought I'd give them ago, even though the small ones are perfect 10'0 size..

Hope those rock pool Occys don't have blue rings
I have found a couple of those at Kalbarri.

Cut off its head and get a
Cut off its head and get a large pot and place enough liquid to cover the occy.
Use water wine vinegar some peppers onion even garlic in the water you are using.
Get it simmering and leave it on for an hour -1.5.
When its been in for a while you should be able to stick a fork in it and the fork will pull out easily.
pull out of the water and allow to cool so you can remove skin and suckers by running your hand along each tenticle.
Cut into pieces and pickle in a mixture of white and malt vinegar.
Get a bottle of fat free Italian salad dressing and pour the contents over the jarred occy first whilst adding some pepper corns sliced onion.Top up the remainder of the jar with the vinegars's.
Great for jumbo crays too!

You won't need the fat free salad dressing Adam... that's just some advice Goat's friend Jenny gave him...
He's been really trying as of late, has anyone noticed?

Fat free isn't for the weight but because it is mainly spices blended with vinegar!
