fillet knives

Hi all out there.
Im on the hunt for a couple of new really good quality filleting knives.
I have always used 6 inch and 9 inch knives and see no reason to change.
Just need a couple new blades but want really good quality.
I been looking at Kato, Kershaw or Martiini.
Any one have preferences to what they use??

What would you recommend to fillet a 295mm blackass with pete?

I would recommend your mate puts it back , other wise fisheries will smack him with a large fine as what happened to my mate haha

Dexter are the way to go.
MBL in Canning Vale Banister Rd stock them along with a heap of other quality (Victornox, Shun, Swibo, ect) blades that will more than do the job.

but for $10- 15 u can buy a knife there called Sharp its
Solingen steel takes and holds edge with the best of em
Harvey meatworks use em
the Dexters etc at 8 times the price is no better - i got Dexters and kato
the Sharp is as good

fillet knives
I have always been a Dexter fan for all my work knives being a pro kangaroo shooter. Awesome blades.
I settled down and bought a set of Matiini knives and a couple cheaper Penn and Rapala knives. Martiini are smooth knife to use. Highly recommend them

Gonna throw a diff name out there, I have a few BUBBA BLADES and love them.. all of mine are 9 inch.
Wish I got the shorter 7inch one thou, as bigger isn't always the best.

Swibo are a definate winner, awesome steel that can be easily sharpened, used them for filleting and in the kitchen for years!!

I recently bought the 16cm
I recently bought the 16cm Fdick boning knife, 20cm fillet knife and 30cm Swibo ham knife. Also have a Martiini with a thinner blade for doing smaller fish. They are a dream to use but you do need to keep good knives away from the women folk.

I agree Jack. I have had some of my knives razor sharp, the kinda sharp you could shave with and my missus absolutely obliterated them cutting up a heap of spuds and stuff on a stainless bench with no protection for the blade what so ever. Dint think she really cared either as i would just have to sharpen them again. My 18yr old daughter is worse!

Anyone wants there blades sharpened while you're down south let me know and i'm sure with some Coopers pale ale currency i can help you out.
I have a Tormek 7 wet stone grinder ( 4000 grit ) and leather honing wheel, 90 rpm.
You wont get them sharper.

picked one up from All Boats. Great knife ( almost too sharp ). The blade was catching when filleting out. Really good now.
