 hi guys, i have heard for ages that carp are bad eating and taste like mud, so i dicided to do some reserch, i found this profetional video of this guy showing us how to cook, clean and to get rid of that muddy flavour, so heres the link, its worth a look.

no mud flavour if they grow up in Gin clear water.

 

what ever the situation you caught them in I would apply the following cooking technique

 

fillet and debone if that's your gig, or just cut into steaks

put large pot on stove with fresh water in it and bring to boil

place fish and some stones from where the Carp was caught and boil for five minutes on medium heat

remve fish and strain rocks from water

serve rocks with salad , and dispose of Carp thoughtfully.

cooked fillets in a fry pan whilst camping and reckon they taste pretty good. Some old timers reckon to put them live in a bath tub or similar with fresh water for a few days to flush the mud out. Don't worry about the precious palettes of some. Try it yourself and then you will know 1st hand.

 Carp filet (crumbed and deep-fried) with potato salad is actually a Christmas dish in central Europe and the carps itself quite valuable export article. Carps are bred and fed in man made lakes / ponds, then harvested and sold on the markets alive (or you can get it killed, if you are not man enough to do it yourself). Carps dig in mud, but they don’t eat it, so they don’t really taste like that, unless they lived in a sewage pond… They are bit oily, when big. Bones are more of an issue, apparently they have the most bones out of all fish. So you can pretty much forget about deboning it. Other than that, they taste ok.

They eat them everywhere else in the world, along with crap tilapia.  Australians are very spoiled, (fortunately).  I've eaten heaps of carp while in China, but they are covered in yummo Chinese sauces so you wouldn't know what it was, apart from the zillion bones.
